Carbohydrates are the essential part of nutrients for our body. They are the source to provide sweetness in the form of various monosaccharide and polysaccharides. There are various examples of sugar like, glucose, fructose, sucrose, lactose etc.
Among them sucrose is taken as a main reference sugar whose sweetness is rated as 100, and above this level all are more sweet than sucrose. Sucrose is a disaccharide and a reducing sugar. Only one sugar has a higher rate than sucrose is fructose. Fructose is a non – reducing ketohexose that consists of 6 carbon chains with a keto group along with hydroxyl groups. The sweetness of fructose is rated as 140, that is the highest among all carbohydrates.
Hence, the sweetest of all sugar is fructose.
