Hint: Fermentation is the chemical breakdown of a substance by bacteria, yeast or other microorganisms. Maida is used in making bread and other bakery products. The yeast is of two types- bakers yeast and brewer's yeast.

-The main ingredient used in making bread is baker's yeast.
-The selected strains of Saccharomyces cerevisiae, used in the baking industry to bring about desired changes in flavour and texture of the baked products, are sold as baker's yeast .
-They are available in the form of powder or cakes.
-These yeasts have the ability to ferment the sugar in the dough.
-The carbon dioxide produced during fermentation is responsible for the leavening ( i.e. raising the dough )
-Both carbon dioxide and alcohol escape during baking so that the bread and other baked products are porous and soft.
-The bakers yeast is manufactured by growing the 'stock' strain on molasses and then collected after centrifugation and washing.

-Batch process - In this type of fermentation a large volume of nutrient medium is inoculated and allowed to proceed until maximum yields have been obtained. At this point, the fermentation is stopped, the product is recovered, the bioreactor is cleaned , resterilized and a fresh batch is started.
-Continuous process - In this process, the fresh nutrient medium is added either continuously or intermittently accompanied by a corresponding continuous or intermittent withdrawal of a portion of a medium with the fermented product.
