The carrot plant is basically a biennial plant which typically belongs to the family of Apiaceae. It is characterized by fast-growing cultivars that grow and mature within three months of sowing the seed, whereas some slower-maturing cultivars which grow within four months.

The roots of carrot contain very high quantities of beta-carotene, and it is also a rich source of vitamin K and vitamin B6. They also have application in preventing night blindness that is majorly caused by the deficiency of vitamin A.
