Taste buds are sensory organs present on the surface of the tongue. They detect the taste of the dietary intake of a person. These taste buds have taste receptor cells present on the surface of taste buds that interact with the incoming food and detect the taste. These taste buds are immersed in the epithelium of the tongue and interact with the incoming food through a taste pore. Microscopic hair-like projections known as the microvilli are present on the taste bud cells that help in sending signals to the brain to detect the taste of the food. The taste buds that detect a particular taste are grouped. There are in total 4 types of taste receptor cells. The type 1 cells are responsible for detecting the salty taste. They are the most abundant taste receptor cells present on the tongue. The Type 2 cells have certain proteins that detect the sweet taste. Type 3 detects bitter taste and the last type 4 detects sour taste. When the taste buds come into contact with food they trigger a signaling response that results in releasing of certain neurotransmitters that activate specific regions of the brain that recognize the particular taste of the food.

It is an olfactory sensing organ that detects the taste of the food by its aroma.
