Then bacteria added to the milk and ripening of milk occurs and converts into curd. The process of fermentation begins lowers the pH of milk and develops cheese flavor. After that curd is cut into pieces and heated to separate whey from the curd.
- The next step involves - the curd is cut into sections and piled on top of each other. This step is called cheddaring. For cheddar cheese, the cut pieces of curd are sprinkled with dry salt. The salty curd pieces are transferred into the cheese hoops and they are pressed to form the cheese.
