The food gets transformed into active proteins, vitamins, fatty acids, and other nutrients in the endosperm. They become rich in carbohydrates and increase their amount. The complex food materials get converted into diffusible form when the seed starts germinating. The seed starts germinating when they are soaked in water and the metabolic activity in dormant seeds is initiated when they get hydrated in water. The endosperm persists in a mature seed stage as a storage tissue and the seeds are known as albuminous or endosperms. It is distributed between both endosperm and embryo in certain species. On getting maturation it stores fat and other main starches.
