Bile is a complex fluid that passes from the biliary tract into the small intestine, comprising water, electrolytes and a battery of organic molecules, including bile acids, cholesterol, phospholipids and bilirubin. In all animals, there are two profoundly significant functions of bile:

Bile contains bile acids, which are important in the small intestine for digestion and absorption of fats and fat-soluble vitamins.
Many waste products, including bilirubin, are extracted from the body by bile secretion and stool removal.

Bile acids are derivatives of hepatocyte-synthesized cholesterol. Ingested as part of the diet or extracted from hepatic synthesis, cholesterol is converted into cholic and chenodeoxycholic bile acids, which are then conjugated to an amino acid (glycine or taurine) to create a conjugate form that is actively secreted into canaliculus.

Bile acids, that is, contain both hydrophobic (lipid soluble) and polar (hydrophilic) noses, are facial amphipathic. The part of bile acid derived from cholesterol has one hydrophobic face (that of the methyl groups) and one hydrophilic face (that of the hydroxyl groups); the amino acid conjugate is polar and hydrophilic.

The food moves from the stomach to the small intestine, where the secretions from the liver and pancreas are combined until it reaches it.
The liver secretion is a bile that does not contain any digestive enzymes, but is used to emulsify fat so that the fat in the diet is broken down into small fat globules that can be quickly digested.
