Hint: The period of 700 to 1750 was a major challenge for historians. Particularly because of the variety of developments and movements occurring during this period. As society became more differentiated, people were grouped into sub-castes or jatis. They were ranked according to their occupational background in society.

Complete answer: Jati or sub-caste were based on the occupational backgrounds, however, the ranks were not fixed or permanent and were changed according to power, influence, dominance and the resources controlled by members of jatis in the society. The status of the same jati could also vary from area to area.
Now talking about the regulation of affairs:
-They were managed by jatis for the conduct of their own members.
-It was enforced by an assembly of elders, called jati panchayat in some areas.
-Jatis on the same hand were also required to follow the norms and rules of their villages.
-Several villages were governed by a chieftain.
-Marathas, Ahoms, Sikhs, Kayasthas and Jats were important groups during that period.

Note: Don't get confused between jati and varna. There are only four types of varna whereas there are thousands of jatis. While varna originated in Vedas, jatis were originated later. Varna is fixed and permanent, while jati is not.
