Proteins, where amino acids are the building blocks, are the central part of living cells. A series of amino acids shapes proteins. Plants synthesize, by way of photosynthesis, amino acids from the main elements, carbon and oxygen derived from sunlight, hydrogen from water in the soil that forms carbon hydrate (such as glucose). Glucose interacts with the nitrogen that plants receive from the soil, contributing to the synthesis of amino acids via collateral metabolic pathways.

Proteins have a structural function, a metabolic mechanism (enzymes), a transport function and a stock of functional amino acids. Plants assimilate only L - Amino Acids. This amino acids help increase the abundance of chlorophyll in the plant, contributing to greater photosynthesis. This makes for lush green crops.

Plant-based foods that contain all nine essential amino acids are soy, quinoa and buckwheat, making them total sources of protein. Some plant-based protein forms, such as beans and nuts, are deemed insufficient since one or two of the essential amino acids are absent.

Note: Aspartic acid and glutamic acid and are the most common amino acids in plants. Pearson's study of the association between various amino acids found that the amino acids did not have any negative associations.
