1.Simple carbohydrates:- They are simple sugars like glucose fructose ,galactose (monosaccharides) ,maltose ,sucrose ,galactose(disaccharides).the food materials that contain simple carbohydrates are fruits,vegetables,dairy products,honey etc
Monosaccharides:-monosaccharides contain a single unit of sugar. This is called the monomer carbohydrates. Example: 5 carbon monosaccharide ribose is present RNA.
Disaccharides- disaccharides contain 2 sugar units.
2.Complex carbohydrates:-they are also called polysaccharides that consist of a large number of sugar molecules bonded together .Examples are starch and dietary fibers. Mainly there are three main polysaccharides. Carbohydrates containing a few saccharides ranging from 3 to 10 are called oligosaccharides. Their function uis cell binding and cell recognition. Cellulose is also a polysaccharide found in the cell walls of plants. Even though they are not digestible they help in defecation
a)Starch:- it is the storage form of carbohydrate in plants. Nuts ,seeds,grains,legumes contain starch.It is converted into glucose by the digestive action of our body.
b)Glycogen:-It is the storage form of carbohydrate in animals.Excess glucose in our body is converted into glycogen and is stored in our muscles and liver. When there is energy shortage the stored glycogen is again converted in to glucose
c)Fibre:-Fibers are indigestible to human being.Fibre containing food are grass,straw,seed husk etc.The common form of fibre present in this food materials are cellulose which cannot be digested by our digestive system
Note: High levels of carbohydrates are present in processed and junk foods including cakes,cookies,sweets etc. Animal based food has a slow level of carbohydrate even though milk has a high amount of lactose.
