Methylated spirit is employed to dissolve chlorophyll. Since chlorophyll is soluble in organic solvents including ethanol, the leaf is soaked in ethanol or denatured alcohol to extract the green pigments, or chlorophyll. A leaf with both green and non-green sections is understood as a variegated leaf.
Now methylated spirits is essentially ethanol, to which a touch of methanol (i.e. methylating the first spirit) has been added, in order that if you drink the spirit you go blind. That being said, cocktails, liqueurs, and wines, and spirits have some sugar content, which is a sweet indication that sugar will dissolve.
Suitable to be used as a solvent for patent knotting, some varnishes, some spirit based paints and French polish. Methylated Spirits also can be used as a cleaner/degreaser for paint work, glassware and for wiping resinous matter from knots before knotting. It's also commonly used as a fuel for heating/cooking.

Denatured alcohol is an alcohol & once we boil the leaf in alcohol we are testing it for starch as this is able to remove the chlorophyll from the green leaf.
