Hint: Pancreatic amylase is an enzyme that is used for the hydrolysis of starch into sugars in catalyzing the reaction. It consists of large amounts of starch but little sugar which acquires a slightly sweet taste when chewed.

Complete answer:
Pancreatic amylase helps in the completion of digestion of various small molecules that is absorbed into the blood and carried out throughout the body including carbohydrate and glucose. It is the major digestive enzyme that hydrolyses starch into simple sugar such as maltose and glucose for absorption. The important source of energy supply is the sugar and the pancreatic amylase break down the raw and cooked starches with the high speed and efficiency. When the pancreatic amylase and starch come in contact with each other the hydrolysis process is completed within 10 minutes in the small intestine. The active protein digestion of the stomach is done by the pepsin enzyme which acts on protein molecules and breaks the peptide bond which helps in holding the molecules together. Digestion is completed in the small intestine by the pancreatic enzymes chymotrypsin, trypsin, and carboxypeptidase.

Additional information:
Pancreatic enzymes are commercial mixtures of amylase, protease, and lipase. It is used to treat the syndrome of absorption due to certain pancreatic problems. These problems may be caused due to cystic fibrosis and surgical removal of the pancreas or long-term pancreatitis. It can be caused due to pancreatic cancer among others. Vomiting and abdominal pain following constipation and diarrhea are some side effects that include perianal irritation and high blood uric acid.

So, the correct answer is 'Assertion is correct but Reason is incorrect'.

Note: The word pancreas is derived from a Greek word which means “All flesh”. The pancreas consists of a head and a tail and the widest part is the head which is attached to the part of the small intestine known as the duodenum. It can taste sugar as it contains taste receptor cells.
