We know that vegetable oil contains unsaturated hydrocarbons which means they contain only single bonded carbon atoms, but on the other side vegetable ghee contains saturated hydrocarbons that means the carbon atoms are connected with double or triple bonds.
So, the vegetable oil which has unsaturated hydrocarbons i.e. only single bonded carbon atoms. The unsaturated hydrocarbons are good for health whereas vegetable ghee which has saturated hydrocarbons i.e. doubly and triply bonded carbon atoms. These saturated hydrocarbons are not good for health.
